I grew up not going out to eat much. My parents cooked a lot at home. When we did go out to eat, though, we ate Chinese takeout. Now, when I was little I didn't care for much from takeout. I ate fried rice (who doesn't like fried rice?). So, I'll admit that I didn't have my first egg roll until I was an adult. But, I love them now!
So, when I was coming up with my next recipe to post, I decided on egg rolls. But, I wanted to give an alternative to the deep fried egg roll that everyone knows. So, I saw that there are several egg roll in a bowl recipes out there (thanks for taking the time to read mine). I decided to make my own!
How It's Made
I love pork egg rolls. So, that's what we're starting out with. I can get ground pork from my local grocery store, but you might have to ask the meat counter for it. We're also using regular green cabbage in this dish instead of napa or bok choy. This is just a personal preference for me since green cabbage is easy to find.
So, we start by shredding the cabbage and carrots. Shredded cabbage is easy to create by quartering a cabbage and then cross cutting it in very thin slices. Shredded carrots can be made on a cheese grater, or you could buy them pre-shredded.
More Produce
I like the addition of the half moon onion slices here because dicing onions for this recipe almost makes it too chunky. We're also using minced garlic and fresh grated ginger both of which should melt into the dish nicely! Almost ready to put the dish together!
The Sauce
Egg rolls typically are filled with everything we've mentioned here, but combined with a marinade. For Egg Roll in a Bowl, we're going to make a delicious sauce that we'll cook directly into the dish. The sauce is similar to a teriyaki sauce, but different enough to not call it teriyaki. It calls for soy sauce, Hoisin sauce, fish sauce, oyster sauce, mirin, sesame oil, and cornstarch to thicken the sauce while it cooks.
Wrapping it up
Cooking this is pretty easy. We're browning the pork and then adding in ginger and garlic until fragrant. Then we fold in the rest of the produce and let it cook. Once most of the veg is softened up, we'll stir in the sauce and let it cook until thick. And that's it! You can plate this up by itself to keep this low carb. For my family, I plated it over fried rice! Top it with scallions and toasted sesame seeds! I hope you enjoy this as much as we did!
Egg Roll in a Bowl
Ingredients
- 1 lb Ground Pork
- 2 whole Carrots – shredded
- ½ tbsp green cabbage – shredded
- ½ tbsp medium onion – sliced
- 2 cloves garlic – minced
- ½ tsp fresh ginger – grated
- 3 tbsp soy sauce
- 1 tbsp hoisin sauce
- ½ tbsp oyster sauce
- 1 tbsp mirin
- 1 tbsp rice vinegar
- Dash fish sauce
- ½ tsp sesame oil
- 1 tbsp cornstarch
- Salt and Pepper to taste
Instructions
- Over Medium High heat, brown ground pork until cooked through
- Stir in ginger and garlic and cook until fragrant
- Add in remaining produce and cook until wilted but not quite soft
- Stir in sauce and cook until thickened (approximately 5 minutes)
- Serve alone or over your favorite side
