Low Carb BBQ Chicken

A quick and easy meal that is great on a diet or anytime!

Ingredients

Thighs

  • 1 ½ lbs boneless skinless chicken thighs
  • 2 tablespoon olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon Kosher salt
  • 1 tablespoon black pepper

Sauce

  • 1 ½ cups Sugar Free Ketchup
  • 1 ½ cups Apple Cider vinegar
  • ½ cup yellow mustard
  • 1 cup Brown Sugar alternative Swerve
  • 1 yellow onion diced
  • 3 cloves garlic minced or crushed
  • 1 tablespoon smoked paprika
  • Salt to taste
  • Cayenne pepper as needed for spice

Instructions

Chicken

  • Preheat oven to 400° F
  • In a large mixing bowl, add chicken thighs
  • Coat chicken thighs in olive oil by stirring with hands
  • Mix seasonings in separate bowl, then pour over the top of chicken
  • Thoroughly coat the chicken in seasoning mixture
  • Place chicken on a parchment paper lined baking sheet
  • Bake in oven for 20-25 minutes or until chicken reads 165° F
  • Remove chicken and let rest for 5 minutes; start broiler
  • Coat in BBQ sauce and place under broiler for 1-2 minutes
  • Remove and let chicken rest another 5 minutes. Serve immediately
  • Leftovers are good in the fridge for about 4 days in an airtight container

Sauce

  • Heat saucepan over medium-high heat
  • Add olive oil and heat until shimmering
  • Add in onion and cook until translucent
  • Add in garlic and cook until fragrant
  • Stir in smoked paprika and cook for 1 minute to bloom the flavor
  • Add in ketchup, mustard, apple cider vinegar; stir until combined
  • Stir in brown sugar substitute
  • Bring to boil and reduce to simmer for 10 minutes, salting to taste
  • Remove from heat and pour into blender or use immersion blender
  • Blend until smooth
  • Allow to cool. Store in airtight container for up to 1 month
