Yep, we're back on some pasta! But sometimes you have to go to what you love! So, here we are. It's getting late in the evening. I haven't had time to prep a meal. Now it's time to eat. Thankfully, I've got this one pot meal in my back pocket for a time just like this!
This one pot meal is delicious, and it doesn't make a mess! It's perfect for a quick meal when you don't have time to prep or clean up! It's not a lot different from this recipe, but it's definitely faster and more efficient! Let's get into this one!
What's in it?
There's a handful of ingredients that I always try to keep on hand. I've always got a couple of types of pasta. I've always got some onions, some garlic, and I try to keep some fresh tomatoes when possible. So we're going to throw all of that in this dish! I also like to have some sausage sitting in the fridge whenever possible. I also like to have some chicken stock on hand. I make it from scratch, but it's always nice to have a quart from the store in reserve. The sausage in this dish is a roasted garlic chicken sausage that I got directly from the grocery store. It compliments this dish perfectly!
Since we're making this creamy, we're going to add some heavy cream. We'll finish it off with some fresh basil and parmesan cheese. The basil is always optional, but it really pops off the dish with a layer of freshness!
How it's made
This is a one pot dish, but we're going to elevate it over a standard "dump it all in the pot and forget it" one pot meal. First we're going to brown the sausage, then we're going to remove it from the pot. We toss in the onion and tomato and let the onions get translucent and cooked through. Mix in the garlic and some tomato paste next, then we're going to add in the chicken stock, Italian seasoning, and pasta. We'll cover and let the pasta come to boil and occasionally stir it up.
Finally, once the pasta is cooked, we'll take the pasta off the heat. Then we'll add the heavy cream and stir it in. Lastly, we'll add the fresh basil if you're using it, and the cheese. Plate it up and top it with a little more basil and cheese. And that's it!

One Pot Creamy Tomato and Sausage Pasta
Ingredients
- 14 oz chicken sausage or other sausage - sliced
- 1 medium onion diced
- 2 cloves garlic minced
- 1 tbsp Italian seasoning
- 4 ½ cups chicken stock
- 16 oz dry pasta
- 1 tbsp tomato paste
- 8 oz fresh cherry tomatoes OR**
- 14 oz can diced tomatoes**
- 1 cup heavy cream
- ½ cup parmesan cheese
- 1 tbsp olive oil
- ¼ cup fresh basil optional
- Salt to taste
Instructions
- Heat a large stock pot or dutch oven over medium high heat. Add olive oil
- Add sausage to pot and brown
- Remove sausage with a slotted spoon to a paper towel lined plate leaving sausage fat behind
- Add in onions and tomatoes and cook until onions are translucent
- Stir in garlic and cook until fragrant (about 30 seconds)
- Add in tomato paste and stir into all other ingredients. Cook until rust colored in bottom of the pan
- Add chicken stock, Italian seasoning, pasta, and sausage to pot and scrape the bottom of the pot to remove brown bits
- Cover pot and heat until boiling. Boil pasta until tender, stirring occasionally
- Once pasta is tender (about 8-10 minutes), stir in fresh basil if using, then remove from heat
- Stir in heavy cream and cheese
- Check for seasoning and add salt as necessary
- Plate up, top with more fresh basil and cheese. Enjoy!
